- Whole grains are composed of three
principal parts, the bran, the germ
and the endosperm layer of cereal
plants. Each part of a whole grain
will provide specific nutrients - the
outer protective layer of the seed
(bran) contains fibre, some B vitamins
and phytochemicals, the endosperm is
primarily carbohydrate and the germ
component is concentrated with the
minerals iron and zinc, and the
antioxidant vitamin E - Most of the grains that we eat (refined
grains) have undergone milling to
improve the texture and palatability.
